Accessing data by column name

What is a good way to access the value of a particular cell within the currently selected column, by column name? This would require assigning column names ahead of time of course.

Actually, a more straightforward question related to this would be to ask if anyone knows of a good way to allow for the selected row to be submitted as a set of form variables?
