I'm a little confused

I'm far from being an expert and when I try to learn what things mean or what they are they are always described with terms and words I don't understand! what I need to do is find a way if possible to scan a document as picture pdf text whatever and insert the data into a spreadsheet like excel or something. can this be done and how....thanks--jen
